YELLOW LENTILS

"Growing up, we ate these lentils so much ! I eat this with boiled rice, pickles and a little bit of yogurt, and it just reminds me of home. " Also known as Arhar Dal in North India, this is the most commonly cooked lentil dish in India.

Ingredients

  • 225 g Toor Dal / Yellow Lentils
  • 1 Onion Large
  • 2 Tomatoes Medium
  • 3 Garlic Cloves
  • 1 tbsp Grated Ginger
  • 2 tsp Chopped Green Chillies
  • 1 tsp Cumin Seeds
  • 1 tsp Dark Mustard Seeds
  • 3 Dry Red Chillies
  • 1 tsp Salt
  • 3 tbsp Ghee
  • 10 g Fresh Coriander
  • .5 tsp Turmeric (Optional)

Step 1

Wash the lentils and Soak them in cold water for 30 minutes

Step 2

Boil the lentils for 15-20 min, until they are soft and easily mashed by hand. For 1 cup of lentils, put 3.5 - 4 cups of water

Step 3

Finely Chop the red onion

Step 4

Finely Chop the tomato, you can also use tomato paste

Step 5

Crush some garlic, grate 1" ginger and chop green chillies.

Step 6

Take 2 spoons of ghee / olive oil, when its hot, add cumin, add some garlic and ginger and fry for 30 seconds, then add onions and fry until they are golden and translucent

Step 7

Add chopped tomatoes and green chillies (optional) and fry until they are soft and it starts to looks like a paste. Add some salt.

Step 8

Now add the boiled lentils to the pan and add turmeric (Optional)

Step 9

Cook the lentils in a low heat for 10 min and add some fresh coriander

Step 10

In a small pan heat 1 spoon of ghee / Olive oil. Once it is hot, add mustard seeds, garlic, broken red chillies and curry leaves

Step 11

Fry for 30-45 seconds until the garlic gets golden and you can smell the flavours. Add this to the lentils and mix well

Step 12

Lentils are now ready. Garnish them with fresh coriander. Best eaten with boiled rice.
