GLASS NOODLE SALAD

"This refreshing Thai glass noodle salad is very healthy, and it's good for our diet. I cook it all the time at home. When I'm hungry and I want to have something light, I just have this as my meal."

Ingredients

  • 100 g Glass Noodles
  • 150 g Cooked Peeled Prawns
  • 3 Celery
  • 1 Red Onion Small
  • 1 Tomato
  • 3 Spring Onions
  • 1 Carrot Small
  • 2 Garlic Cloves
  • 2 Fresh Red Chilli
  • 5 g Ginger
  • 4 tbsp Fish Sauce ( Or Light Soy Sauce)
  • 1 tbsp Brown Sugar
  • 2 Lime
  • 50 g Roasted Peanuts

Step 1

Soak the glass noodle in warm water for 5 mins until they get soft, then put them in boiling water

Step 2

Take the noodles out after a couple of mins to avoid over cooking

Step 3

drain the water from the glass noodle and cut them into small pieces

Step 4

Add lime juice and sugar to the noodle and mix them thoroughly

Step 5

Add some chopped chillies and garlic, You can also add a bit of grated ginger (Optional). Remove the seeds from the chillies for less spicy option.

Step 6

Cut celery, carrots, tomato, onion and spring onions and add to the salad. Chinese celery recommended as it's more juicy and aromatic

Step 7

Add fish sauce or light soy sauce as a vegan option

Step 8

Now add cooked prawns and mix the salad well. For vegan option you can add fried tofu

Step 9

Garnish with some roasted peanuts, enjoy!
