Thanya recreates her childhood flavours in this beef noodle soup recipe. "I was born in a Noodle soup shop and spent my whole childhood helping my mother making this soup" 

Ingredients

  • 500 g Beef Bone
  • 100 g Beef Steak
  • 200 g Rice Noodles
  • 30 g Bean Sprout
  • 5-6 slices Carrot
  • 5-6 slices Radish
  • 1 Onion
  • 2 Spring Onion
  • leaves Coriander
  • 5-6 clove Garlic
  • 5-6 Crystal Sugar
  • 1 cube Bouillon
  • 1 tbsp Peanuts
  • as per taste Salt
  • 1 tbsp Vegetable Oil
  • 1 tsp Chilli Powder
  • 1 tbsp Soya sauce (Optional)
  • 1 tsp White Vinegar (Optional)
  • small piece Galangal
  • 1 Cinnamon
  • 2 Star Anise
  • 5-6 Peppercorn
  • 2 White Cardamom

Step 1

Soak the noodles in the cold water for 10 minutes

Step 2

Add the beef bone in water. Wrap the 5 spices (Galangal, Cinnamon, Start Anise, Peppercorn and cardamom) in a small cloth and add them in water. Don't use too much

Step 3

Cut Carrot and radish and add them to water. Crush the coriander root and add it to the water

Step 4

Cut onion into half and add to the water. Add 1 bouillon cube and little bit of salt

Step 5

Add crystal sugar to the water. Cover it with the lid and let it cook for half an hour on medium-low heat

Step 6

Crush the garlic in pestle and mortar

Step 7

Fry the garlic in the vegetable oil, keep stirring to avoid it getting burnt, Little bit brown but not burnt. Keep it aside

Step 8

Take some bean sprouts in the strainer

Step 9

Add some noodles in the strainer, you can also add some spinach or broccoli

Step 10

Put the strainer in the boiling water and cook it for around 3 minutes and then put them in a plate

Step 11

Chop some spring onions and coriander for garnish. Cut raw beef steak into very thin slices

Step 12

Add beef slicers, spring onions, coriander and fried garlic to the noodles in the plate

Step 13

Check the soup, when the beef and vegetables are thoroughly cooked, the soup is now ready

Step 14

Pour the hot soup onto the beef and the noodles

Step 15

Add some fresh bean sprouts and garnish with crushed peanuts and chilli powder. You can also add soya sauce and white vinegar as an option
