  • 150 g Sweetcorn
  • 90 g All Purpose Flour
  • 60 g Rice Flour
  • 250 g Cabbage
  • 2 Spring Onions
  • 1 Shallot
  • 2 Eggs
  • 3 Garlic Cloves
  • 1 tsp Salt
  • .5 tsp Ground Black Pepper
  • .5 tsp Turmeric
  • 200 ml Water
  • 500 ml Oil for Frying

Step 1

Cut the cabbage into thin slices

Step 2

Finely chop the shallot, spring onion and garlic

Step 3

Remove the stem of the lime leaves and finely chop them into small pieces

Step 4

Put all the chopped ingredients into a big bowl and add corn, rice flour and all-purpose flour

Step 5

Add brown sugar, salt and a bit of pepper and turmeric powder

Step 6

Add eggs and some water, mix the batter evenly

Step 7

Heat oil in a frying pan, when the oil is very hot, carefully place a spoonful of batter in

Step 8

Fry only 4-5 fritters at one time so there's enough space for each to cook properly

Step 9

Once they are golden brown, take them out on a kitchen roll to drain excess oil. Best eaten with Kecap Manis or chilli sauce
